La Unión is an old Murcian mining town, and once a year its restaurants take a turn around the famous Cante de las Minas flamenco festival. The idea is simple: a handful of kitchens put on a set tasting menu built from regional cooking, with a dessert dreamt up by students on UCAM's gastronomy degree. It runs in stages rather than all at once, so you pick your moment.
El Rincón del Patrón kicks things off over a couple of days in June, Los Churrascos takes the middle stretch in July, and Taberna Tienda Solita carries it through into early August, overlapping the festival itself. Each place sets its own price, and tables fill quickly, so it's worth ringing ahead. Pair lunch with the town's mining museum and you've got a proper afternoon.
