The ensaïmada is that coiled, sugar-dusted pastry you'll have spotted in every Menorcan bakery window, and the Sant Joan version is its festival cousin. Here, in the old townhouse rooms of the Can Saura museum, the town's culture department runs a short, hands-on session where you actually learn to make one. You'll work the dough, coax it into its trademark spiral and pick up the small tricks that separate a good one from a flat one.
It's a nice break from the heat and the crowds that build ahead of Ciutadella's midsummer fiesta. There are two evening sittings and not many places in either, so book ahead through the ticket link. It costs nothing, which makes the careful booking worth the bother. Come a little hungry.
